Peanut Butter Cookies

This has become my favourite peanut butter cookie recipe. I love the added spices. I used all smooth peanut butter and no butterscotch chips in this batch. Standard size cookie scoop makes 75 cookies. I've frozen these unbaked (freeze on cookie sheet and then bag them up) and will bake them for Christmas time. 🎄 🍪

Basic Pizza Crust

- I wanted a thin crust pepperoni pizza

- I got a thin crust pizza

- used a little cheddar on top as well

- Italian spicea around the edge of the dough 

- used the 18inch pizza pan and stretched the dough to fit

- first recipe I've made from this book 😁

- reheated slices in the Air Fryer 400 for 5 mins makes the crust cracker like - loved it!

Tuna Pate

Tuna Pate - Company's Coming - Starters and Company's Coming - Appetizers

I took this idea of tuna pate and made up something I would eat. I was tired of regular tuna sandwiches.

- can of tuna, drained.

- mixed it with about half a container of Dilly Dip - (cream cheese mayo spice dill pickles) - it's a thick spreadable dip. 

- I ate it in lettuce wraps and it was delish. Next time I'll make up some pinwheel sandwiches with it.

      Recipe from - Company's Coming - Timeless Recipes for All Occasions pg 160. Same recipe is in Company's Coming - Millennium Edition - Everyday Recipes for Changing Times pg 174.

- used a glass 9x13 pan

- no raisins

- added 1 tsp allspice

- used 1 cup white sugar, 1 cup brown sugar. And I think 2 cups of sugar could be cut down some.

- it is nice and moist and light

- 30 min bake time

- I will make this again. 

- someone likes it, a whole row went missing already!

Chai Pumpkin Loaf

✖ Chai Pumpkin Loaf - Company's Coming - Mostly Muffins

- made my own concentrate.

- it really wasn't good

- almost no spice, very very light (I know this is part my fault, the tea was strong but not strong enough)

- no pumpkin taste

- the bread itself is wet, but almost dry at the same time. It's slightly rubbery too. Youngest described it as "wet bread".

- it looks orange in this photo but it is not. It's a light dull brown.

- won't make again. I will stick with the Harvest Loaf from the Muffins & More book.

- the squirrels will love this treat!

- I baked this so you never have too 😂

The Great Pumpkin

- this loaf is very nice

- it's dense like a brownie but not heavy

- the cream cheese adds a slight creaminess that you notice when eating. All 3 of us like this loaf 😋

- I can't taste the cream cheese though, and no one else mentioned that they could taste it.

- nice as is and nice with some butter 

- 60 minutes bake time, I did put it on a cookie sheet half way through - I was worried it would be dry with the size of this loaf.

- these are very light and fluffy cake cookies

- they taste great

- white chips added on top

- 50 cookies, using regular sized cookie scoop.

- this recipe is very similar to the Pumpkin Cookies recipe from Company's Coming - Cookies.
