So, why would I of all people decide to make a huge batch of relish? Because I had an insane amount of cucumbers that needed to be used up, and I knew other people in the family would eat it - so I could pawn it all off on them! HA! Really though I did keep a jar - a small one, because I actually liked this stuff. I think it tastes way better then any store bought stuff. The colors are muted so it's not screaming neon at you, and it had a few other veggies in there to make it interesting.
I also have been holding onto this recipe for awhile and didn't write down the source. I'm think it was mostly from a gluten free site, but I have two recipes written down one after another and can't remember anymore!
I didn't own my large 12 cup food processor when I made this recipe. I only had my little 3 cup food processor bought from No Frills - and that thing was a beast. It did take longer to go through all the cucumbers and veggies but it did the job. Come to think about it, I don't know where that baby processor ended up?!
This was easy to make, it was one of the first things I taught myself to can. And if you have a proper size food processor then it won't take nearly as long. I did de-seed the cucumbers - there were seeds left, I just scraped out most of them. I think you could add really whatever you wanted to this since it cooks down and all becomes soft - so finely shredded carrots, and any colored peppers you grew. I think the extra pop of color that the red peppers gave to this makes it look better and a little more interesting then a boring totally green relish would look.
